I'm getting a fuller and well balanced sound with the Audio Technica ATR3350 and consequently preferring to use it

I agree and I'd try to get the skin tones right and let everything else follow.

Cinema is becoming my "go to" when unsure.

Is there a way to see what settings were used on a video if it is still in the camera?

Smooth with all at -2 was the initial setting.
Cinema with all at 0 was the new setting.

All of which seems to suggest that changing the mode or the settings in the mode might have an effect on...

Update:

I finally had a chance to test the Azden and the ATR3350 with my new Tascam DR-05 and they are both clean.
No hiss like with the Zoom H2.

AS Bob said it might depend on the NLE but an other thing to watch out for is to try to use the same frame rate in both cameras.

Sometimes it's nice behind them or inside.
