I have both Windows DVD Maker and Adobe Encore CS5.
Windows DVD Maker is simple and easy to use, but for some reason the audio is out of sync.
Encore is complicate and I am not sure how to use it.

I've always used Sony's DVD Architect, which is somewhat easier to use than Encore. It feels like a more modifiable version of Windows DVD Maker, but not with as many options as Encore. You can do a whole lotta stuff with Encore, scripting events... pulling together great little BluRay type features and such. Such a shame it couldn't be more user friendly (much like Premiere Pro as far as I'm concerned).
I burn 1 master from DVD Architect and then use Nero 6 to copy it, saving the image and using that image if I need to do make more copies.
I use TMPGEnc Xpress for encoding to DVD specs after editing in Vegas. then I burn to DVD with TMPGEnc Authoring Works 4.
Export with Compressor then author with DVD Studio Pro or drop the .mov file directly into iDVD.
