is there a picture profile that can have selective colors like (black & white with just red & blue. or one with just yellow and black or every color is dull but the red pops)

That is way too complex to be done in camera. Better do that in post. You are using Vegas, don't you? Vegas makes secondary color correction pretty easy.

In-camera: can't be achieved as far as I know.
In post, can easily be done with Hue&Saturation. Select the colors you don't want and lower them, then increase the red until you get the right look for you. That's what I'd do.
Actually it's not all that complicated. All the Canon powershot point-and-shoot cameras have such features. I guess they are more for armatures/consumers.
If you get the plug in new blue effects essentials v then it has presets that give a black white effect and whatever the colour you want to pop shows that colour only...
